- 1 pound lamb shoulder, cubed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1/2 cup pearl barley
- 4 cups beef or vegetable broth
- 1 bay leaf

- Fresh parsley, for garnish
Instructions
- In a large pot, brown the lamb cubes over medium heat until browned on all sides. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add the lamb back to the pot along with the pearl barley, broth, bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 1 hour, or until the lamb is tender and the barley is cooked.
- Remove the bay leaf and adjust seasoning if necessary. Serve in small cups, garnished with fresh parsley.
